Job Summary
Under general supervision, the Combination Worker follows standard procedures to accomplish assigned tasks. Employees in this job classification are assigned duties to assist bakers in producing and packaging bakery products and decorators in decorating product. This job classification also includes duties required to maintain the current cleaning and sanitation standards of the Production Bakery.

Responsibilities
A Combination Worker must be physically present at his/her work site to perform all job tasks. This job classification includes a variety of job tasks that support the Production Bakers, Machine Operators, and Decorators. Job tasks do vary between the day and night shifts. The day shift performs various assigned tasks to assist Bakers, Machine Operators, and Decorators as well as performing some clean up duties. The night shift performs cleaning and sanitation of equipment, pans, and the production bakery facility. The night shift also assists in packaging of bakery products Combination Workers are prohibited from scaling and mixing ingredients, setting up/adjusting controls on machinery, operating ovens, and manipulating icing with bow knife or pastry bag to decorate bakery products. The following provides examples of specific job tasks but is not all-inclusive as a Combination Worker may be required to perform additional duties, as assigned:

Qualifications
Sitting:
The only job task that requires sitting is the operation of the riding floor machine. Operation of the floor machine is generally performed by a senior Combo Worker on the night shift. No other job duties may be performed while sitting as this is a production environment and a stool or chair would create a hazard to other workers.
Walking:
_Occasionally _to frequently walks up to 4 hrs. per shift at a moderate to brisk pace on even, concrete or non-slip tile flooring intermittent with standing. The distance walked depends upon job task being performed. Walking may only be 2 - 5 steps within the immediate work area when performing production tasks such as depaning, packaging, feeding or retrieving pans, etc. The distance walked may be up to 250 ft. before becoming intermittent with standing if performing cleaning and sanitizing duties and to transport product from warehouse area to production area.
Lifting/Carrying:
0 – 10 pounds:
Continuously lifts items weighing up to 10 lbs. such as baked products, stacks of round pans and sheet baking pans, utensils, cleaning supplies, and rubber mats (36 in. by 40 in.). The majority of lifting is at waist level with some lifting from floor to waist and some lifting to a maximum of 64 in. (top shelf of an oven rack). Items lifted may be carried 2 – 10 ft. with a maximum carry of 250 ft. Lifts and carries cleaning items such as broom, dustpan, mop, hand brush, cleaning rags and supplies if working night crew.
11 – 25 pounds:
Occasionally to_ frequently_ lifts items weighing up to 25 lbs. and carries 3 - 50 ft. Lifts items from floor to height of 64 in. to pull filled pans from depositor conveyor line and place on shelves of baking racks, lifts totes of baked products from floor to waist level and carries up to 10 ft. to place on packaging line, moves boxes of product from packaging line and carries up to 10 ft. to build pallet of product for shipping (pic. #14), lifts stacks of dirty and/or clean pans and carries up to 5 ft. to load and unload pan washer, lifts to empty trash containers and lifts/carries cleaning supplies, if working night crew.
26 – 50 pounds:
_Occasionally _lifts items weighing up to 50 lbs. from floor to waist level and carries up to 10 ft. in performance of duties. Lifts boxes weighing up to 36 lbs. from waist level conveyor line and carries up to 10 ft. to build pallet of product in packaging room (pic. #14), lifts bundles of cardboard and carries up to 10 ft. to load magazine of carton or baking sheet former, lifts 40 lb. buckets of product from floor and carries up to 10 ft. to place on 36 in. work counter, lifts 50 lb. bags of dry ingredients and carries 2 - 5 ft. to pour into hopper or to place on wheeled device to transport, lifts and carries 8 ft. extension ladder, lifts empty pallets and pushes up to 10 ft. to clear work area, and lifts garbage bin on wheels to dump.
51 – 75 pounds:
Infrequently lifts bucket of honey weighing 60 lbs. and carry 1 to 2 steps to place on wheeled device.
76 – 100 pounds:
Infrequently co-lifts 80 qt. mixing bowl filled with icing weighing 180 lbs. from mixer and carries 1 to 3 ft. to place into bowl stand.
Pushing / Pulling:
_Frequently to continuously _pushes/pulls with light to moderate force to perform the majority of work tasks. Pulls pans from bins and pushes to feed baking pans onto conveyor lines. Pushes/pulls pans to load and unload pan washer. Pushes/pulls to access and load cardboard into magazine of baking sheet former and/or carton former (pic. #11). Pulls filled boxes from line and pushes to stack on pallet. Pushes/pulls ladder on wheels to clean overhead areas. Pushes/pulls to transport oven racks, two-tier carts, and mop buckets on wheels, storage containers on wheels, flat carts, and mixing bowls on wheel.
_Infrequently to occasionally _pushes/pulls with moderate to heavy force to operate manual pallet jack to move bins of pans, equipment, and pallets of dry ingredients weighing up to 2,500 lbs. note: Electric pallet jack may or may not be available for use on the floor. Only the manual pallet jack may be used in mezzanine. Pushes/pulls with moderate to heavy force to move work tables in Cake Room. Pushes/ pulls with heavy force to move and maneuver half-sheet former machine with coworker.
Infrequently pushes/pulls with heavy to very heavy force to push 300 or 400 liter mixing bowls on wheels weighing up to 600 lbs. Pushes/pulls manual pallet jack to move bins of pans, equipment (pic. #8), and pallets of ingredients weighing up to 2,500 lbs. Note: Electric pallet jack may or may not be available for use on the floor. Only the manual pallet jack may be used on the mezzanine.
Climbing:
_Infrequently _climbs in performance duties. Climbs 12 steps to reach depositor hopper and 30 steps to mezzanine. Climbs 8 ft. extension ladder and 7-step ladder on wheels to perform cleaning duties.
Balancing:
Infrequently to work on ladder and climb stairs to mezzanine and depositor. Frequently balances pans filled with liquid product when pulling from depositor line and placing on shelves of baking racks.
Bending/ Stooping:
_Occasionally to frequently _bends from 45 - 90º at the waist intermittently or repetitively depending upon task being performed. Bends repetitively when pulling sheet pans from or loading on lower shelves of baking/storage racks. Bends repetitively to load and unload pan washer. Bends to stack boxes when building pallets of baked product. Bends repetitively to perform cleaning tasks such as washing walls and guardrails, equipment, conveyor lines, toilets, sinks, floor grates etc.
Twisting at the waist:
Frequently twists at the waist in performance of production and cleaning duties. Performing conveyor line work at a production pace makes it difficult for worker to pivot feet to reduce twisting at the waist. Cleaning duties also require worker to twist repetitively at the waist.
Bending at the neck:
Frequently to continuously flexes at neck to look downward in performance of production and cleaning duties.
Infrequently to_ occasionally _extends neck to look upward in performance of production and cleaning duties.
Twisting at the neck:
Frequently twists at neck to perform production line duties such as feeding pans onto conveyor lines and pulling product from conveyor lines. Twists at neck to perform cleaning duties.
Squatting / Kneeling / Crouching:
Occasionally to _frequently _squats and/or crouches to perform cleaning and sanitizing duties at below waist level. Squats to lift heavier items such as bags of ingredients to pour into silo, mixing bowls to place in washer, and garbage bins to dump into garbage shoot.
Occasionally squats and crouches to load and unload trays of product from lower shelves of baking tacks. Squatting is generally sustained for brief periods before becoming intermittent with standing and/or walking.
_Infrequently _kneels in performance of cleaning duties.
Reaching / Stretching:
Continuously works with one or both arms in partial to full extension at or below shoulder level in performance of most job tasks. Reaches to perform cleaning tasks such as sweeping, mopping, washing walls, cleaning toilets and scrubbing sinks. Reaches to perform production line tasks such as loading and unloading pan washer, placing pans/trays on depositor line and pulling pans to place on baking carts, and packaging product.
Occasionally works with one or both arms in partial to full extension above shoulder level in performance of cleaning tasks such as washing mirrors and windows, washing walls, cleaning door track rails (pic. #10). Works at or above shoulder level with both arms to pull and place sheets/trays of product off/on shelves of baking racks up to a height of 64 in.
Handling / Grasping:
Light grasping
: _Frequent _light/simple grasping with one or both hands to perform the majority of job duties such as washing sinks and toilets, sweeping, loading pan washer, lining pans, placing plastic bags in boxes, pulling product from line, and adding or pulling product when packaging to adjust weight.
Firm grasping
: _Occasional _to frequent firm/power grasping with one or both hands to perform cleaning duties such as mopping, emptying garbage bins, lifting mixing bowls to load into washer (pic. #19), lifting stacks of baking pans (10 pans weigh 40 lbs.), loading empty pans and trays on depositor convey line, pulling pans of filled product from depositor line, grasping bundles of cardboard to fill magazine of sheet former or box erector. Power grasps to move/maneuver half-sheet former machine, pallet jack with up to 2,500 lbs. of product, and to maneuver worktables to set up for various runs of product.
Hand rotation
: Occasional to _frequent _hand/wrist rotation to flip pans to depan baked product, load pans into pan washer, load mixing bowls into washer, and hand wash surfaces.
Wrist extension and flexion
: _Occasional _to frequent wrist extension and flexion in performance of job duties.
Fine finger dexterity
: Occasional to _frequent _fine finger dexterity to separate paper pan liners when working at the depositor and to open plastic bags if packaging bulk product. Otherwise, fine finger dexterity is occasional.
Eye/hand/foot coordination
: _Continuous _eye/hand coordination required to perform majority of job tasks. _Occasional _eye/hand/foot coordination to climb ladder or stairs.
Hearing:
Must be able to hear to receive instruction and be aware of warning horns on forklift, floor machine, electric pallet jack and verbal warnings from other workers.
Seeing:
Must have average visual acuity to perform job tasks.
Environmental Conditions
**Work Space: **All work is performed indoors within the 60,000 sq. ft. production bakery facility with the exception of cleaning the outside loading dock area. The Combo Worker may perform work duties anywhere within the Production Bakery facility to include the Administration Offices, Break room, Restrooms, Pan Room, Cake Room, Packaging Room, Warehouse, Spiral Freezer, Freezers, and Refrigerators and in the oven area.
Work Surfaces:
Performs job duties between floor level and 64 in. height of bakery rack. Many job duties performed to assist bakers are on a worktable or conveyer line at a height of 36 in. When performing cleaning duties, works on surfaces of floor, toilets, sinks, walls, windows, and plastic refrigerator curtains. Walks and stands on concrete flooring and occasionally on metal floor of stairs and mezzanine.
Temperature:
The majority of job duties are performed within the production bakery area that is equipped with heaters and evaporative coolers; however, temperatures may range from 50º - 90º depending upon the outside temperatures and product being baked. If assisting Decorators in the Cake Room, temperature is maintained at between 65º and 70º. Workers periodically walk into freezers at -10º, spiral freezer at -20º and the refrigerator at 35º. If loading pan washer, worker performs duties in an enclosed room that is both warm and humid. If working in the Packaging Room, temperature is maintained from 50º - 55º. If performing cleaning duties by the ovens, the workspace is warm and humid.
Moisture:
Some contact with liquids if washing floor, toilets, sinks, utensils, and worktables.
Chemicals:
OSHA approved soaps, degreasers, sanitizers and cleaners.
Noise / Vibration:
Moderate noise level in production bakery due to stacking of pans, operation of ovens and conveyor lines. Ear production is worn if working in the pan washing room due to noise level of the pan washer.
Odors:
Odors are generally pleasant from bakery products.
Hazards:
Burns from hot ovens, burns from 180º water hose, slip/falls on wet or greasy flooring, falls from ladder work, and potential for hitting head when working under stationary equipment.
